Cod with celeriac purée

Valentine’s Day – As a tradition, we don’t tend to eat out on this day in order to avoid the crowds of blossoming couples eager to impress each other. Instead we cook at home.

This recipe was super easy to make. I couldn’t find Halibut in my local supermarket so I decided to swap it for Cod.

The best part of this meal was the celeriac purée which was delicious! I’ve not previously cooked this root vegetable and was surprised by the unique taste it gave to the meal.

I recommend it as an alternative to mashed potatoes for anyone wanting to try something new – cooking instructions are given under step 1 of the recipe. It’s super easy to make and great for any vegetarian readers!
