I have one more BBC’s Good Food recipe to recommend. We first cooked this dish 3 years ago while at university.
The main ingredients are chicken, chorizo, red peppers and rice. The dish is very hearty and filling, and also great cold if there are any leftovers.
We suggest using a good quality chorizo, otherwise when it’s fried up it becomes too hard and chewy. Also, when cooking the chicken make sure not to overcook it as it will also be simmered in with the rice later and can end up dry.
I also fried some okra as a side, using with a small amount of oil and frying for 2 -3 minutes until brown and crispy to soften the orka.
