Sun-dried tomato and mozzarella quinoa burgers

As much as I’m a fan of meat burgers, I can never cook a beef burger well at home. I normally overcook the patties so I stick to eating burgers out instead. At home, we prefer making vegetarian burgers – from a variety of veggie patties and bean burgers to quinoa burgers.

Jessica in the Kitchen‘s blog  has the recipe for this great veggie burger.  The mozzarella cheese melts inside the patty and is a classic addition to the sun-dried tomatoes.

When spooning the patty mix in the frying pan, I suggest making thin patties that way the mix can cook all the way through. Although all the ingredients don’t require cooking for too long, it ensures that the burgers aren’t wet from the egg in the mix.
