Looking for a meat-free dinner option? Here’s another dish I’m grateful to a friend for sharing. This is a recipe by Chef Jenn Segal, from the blog “Once upon a Chef” where she shares her recipes. According to her blog this black bean salad is one of her most popular and has been pinned over 800,000 times on Pinterest! And I can see why – it now makes a regular appearance at our dinner table.
The reference to “salad” doesn’t give enough credit for how hearty and filling this dish is. And if you still think it’s not enough to fill you up, you can try it with these cheese and black quesadillas.
The salad consists of avocado, fresh peppers, black beans and as we aren’t too fond of corn we switched this with plum tomatoes. The star of the show however is the lime and chilly dressing, which gives it the zingy and fiery taste you expect from any Mexican dish! For extra heat you can always add a few jalapeños.
